Cooking Classes:

Last month’s pie making class was a great success! Need ideas for your holiday parties, get-togethers and dinners? Just want to spice up your holiday baking and learn a few new tricks? Join us for one of our three upcoming dessert classes in December. A few spaces are still available, so read below for more information on class specifics and to how to sign up.

 

Simple Autumn Desserts

Join Pastry Chef Laurie Pfalzer in a class focused on beautiful, yet simple preparations of autumn desserts. Learn how to poach fruits such as pears and apples, use savory components such as sweet potatoes and incorporate some winter fruits such as citrus. In this hands-on class, we will make Red Wine Poached Pears Dipped in Chocolate, Spiced Sweet Potato Rice Pudding, and Almond Cake with Warm Citrus-Thyme Salad. Learning basic pastry techniques will allow you to make these simple and versatile recipes in your own home.

Simple As Pie, Pastry Class

Join Pastry Chef Laurie Pfalzer in a fun and educational pie making class. Take the challenge out of pie crust with a little knowledge, a few handling instructions and quality ingredients. Learn to make tender, flaky, flavorful pie crust that you won't have to struggle with. Using seasonal fruits, each student will build their own individual pie and taste some of Laurie’s pie creations, along with fabulous Woodhouse wine pairings. For every season, pie is the answer.
$70 includes Hands-On instruction, Food and Wine

Make Chocolate Truffles Class
December 18th from 5:00-8:30

Intrigue Chocolates chocolatier, Aaron, will be demonstrating how to make chocolate truffles. In this class, participants will be guided through the history of chocolate, see the process of making an intriguing truffle, and enjoy truffle and wine pairings. Ever felt intimidated to work with chocolate? This is the class for you! French-tradition truffles may be one of the easiest confections to make. Space is limited, so sign up now!
$40 includes Class instruction, chocolate truffles, and wine pairings. 

 

St. Nicholas Day Open House:
Sat/Sun December 4/5

We hope to see our loyal friends during St. Nick’s this weekend and looking forward to making some new ones! We will be pouring our ever popular Kennedy Shah Reserve La Vie en Rouge, Kennedy Shah Tempranillo, and Hudson Shah Riesling. Guests can also taste additional Reserve Wines with Winemaker Jean Claude Beck and Owner, Bijal Shah, in the candlelit cozy cellar. Hungry? Saturday will feature our famous “not so ordinary” Ham Sliders and warm up Sunday with our amazing Ham and Bean Soup! Meet our featured fall artist, Rick Scott. Purchases over $40 will receive a handmade beaded wine gift bag.

 

Winemakers Corner

Bonjour mes chers Amis,

Whoa, I cannot believe it, but in less than one months we are done with this year again.
Done, done, done. The crush and harvest, like I told you in an earlier news letter, was a challenging vintage, weird weather, early winter and, and, and….I don’t wanted to make “El Nino” responsible of it, but I am almost sure he was a big player in this game this year.
But, with reflection and some calm, we handled it successfully, and our babies find a home and seem very happy so far. Promising…for sure.
And of course I cannot talk about new harvest without telling about the Riesling Kennedy Shah Reserve from Dubrul vineyards, which is on the top again in this vintage, a little bit different because on the weather circumstance, but phenomenal. And two different Cabernet Sauvignon, one from Fred Artz vineyard in the Red Mountains and the other one from Stone Ridge vineyards in Royal City, which is amazing fruit producer who flirt with her grapes on a 100 points wine level. Exciting to work with. I start having a great view of this both varietal, because of her similitude, her elegance, her power and complexity. I like to say that the Riesling is the Cabernet Sauvignon in white, and the Cabernet Sauvignon is the Riesling in Red. It can bring us some meditation of this subject. And my “coup de coeur of the year” will be the future Rose, maybe “La Vie en Rose”, (not sure yet), made with Grenache grapes from…Stone Ridge vineyards. I can’t wait on this one either and hope that Bijal give us a great party for it, and we will celebrate it with dignity. Et Voila


And I start to be ready to celebrate all the result of a hard, challenging and successful year.
How I celebrate? It is very easy, I wanted to be in casual, warm, quiet and peacefully atmosphere, I am very homebody guy, and my expectation are not that high. To picture you that, my favorite moment is being in the kitchen and playing around cooking, fine cuisine or more traditional cuisine, doesn’t matter, it is like wine, it have to be good, the best is good enough for me”, and if you have the right product, the cooking and the trick are just good feeling about it, some inspiration and a bit of technique too of course. And what I like at the same time that cooking in this precious moment, is to have a few different glass of wine next to me, to enjoy them and to taste them in many different ways. It is an exceptional situation and the very best moment of all. Cooking help me to bring me down after a long day working, it help me to bring me freedom, and it help me to develop all my sense of taste.

But celebrating with family, guest or friends around a table, with nice menu, with great wines, discovering new thing, having interesting conversation, being comfortable on the table, enjoying all of it, and after awhile taking a walk, to refresh yourself, to restore your body, and to be ready when you are back, to keep going. And at this moment, you are very convinced that’s you are going to change the world. And that is the funny part of it.
And that is a way to celebrate and to be thankful for a beautiful life, which is our best gift always.
