Join us at 6:00pm for light appetizers and Woodhouse wine! At 6:30 Intrigue Chocolates chocolatier, Aaron Barthel, will begin demonstrating how to make fresh chocolate truffles crafted in the French tradition. In this class, participants will be guided through the history of chocolate, see the process of making an intriguing truffle, Each truffle will be expertly paired with at least 5 of our exquisite wines. You will leave inspired, and wanting more wines and truffles! Space is limited so sign up now.

Savory Pies and Tarts
February 26, 2011 - 4:00-6:30 pm
It's the year of the Pie! Learn the secrets of beautiful pie dough and tart dough. In this hands-on class, Pastry Chef Laurie Pfalzer of Pastry Craft (formerly of Salish Lodge & Spa) will teach you the secrets of flaky pie dough and tender tart dough. You will make savory Cornish Pasties (hand pies) and Roasted Winter Vegetable Tart using these simple pastry techniques learned in class. Along the way, you will taste your creations paired with Woodhouse wines. These versatile techniques are perfect for both savory and sweet pies and tarts. You will walk away from this class with the knowledge and inspiration to create these beautiful pastries at home.

March 31, 2011 - 6:30-9:00 pm
Pastry isn’t just for dessert! Join Pastry Chef Laurie Pfalzer of Pastry Craft (formerly of Salish Lodge & Spa) for a class focused on savory as well as sweet French pastry. Sit back, sip Woodhouse wines and enjoy Laurie’s demonstration as she creates a light meal using various French pastry techniques for appetizer, main course and dessert. Enjoy French Gougeres (cheese puffs), Roasted Onion and Leek Tart, and Cocoa Nib and Bittersweet Chocolate Napoleon, each paired with Woodhouse wines. You will learn simple French pastry techniques such as Pâte á Choux (profiteroles), Pâte Brisee (savory pie/tart dough), cocoa nib nougatine and chocolate pastry cream and then take the recipes and knowledge home to create these for friends and family.

Winemaker's Corner (Read with French Accent)

Amis du soir Bonsoir,

We still are in the beginning of the New Year and I guess it is not too late to wish you a Happy one. “Better late than never”. So yet, what we can look forward to in 2011? The 01/01/11 and the 01/11/11 is done, but the 11/01/11 and the 11/11/11 is coming and if you take your 2 last numbers of your year of birth and add your age from this year, you should ended up with 111. Ha, Ha, Ha.

More seriously, even a winemaker makes some New Year’s resolutions, but I never like to take a resolution to stop, only to continue. “Allons enfant de la patrie!” So, this year, I decide to continue enjoying good restaurants and tasty good food, I will continue to drink good wine, I will continue to explore the wine world and discover new wine. And I will also continue to enjoy riding my bike on new trails, continue boating on the ferry to my favorite inspiration place…Bainbridge Island, continue to discover the cultural aspect of Seattle (Seattle symphony, Opera, SAM, Bumbershoot Festival, Folklife Festival, Dave Matthews concert at the Gorge etc, etc, etc), and continue to take some little escapes to Teatro Zinzani or even to Napa. And for something new? I would like to go to a game of the Seahawks or the Sounders, where I can sneak a beer!

These are all things that I like besides my work , which I love, and like wine of course all to be consumed in moderation. La joie de vivre, quality of life, these are aspects which bring balance into your life and power to be creative, to bring you some brightness to your brain, to open your mind.

So I bring all this, in balance, to my work at the winery, and actually into the wine. It is all a part of the energy, inspiration, and passion I use to reach my highest resolution – to continue to make better and better wine. I arrive at the cellar happy to take care of my babies, to pamper them and to watch them grow up. There is no limit, we can always reach higher, that is my resolution, day after day, year after year. It is my passion, depuis et pour toujours.

I will also wish a good year here to my Dad, with who I have more and more conversation about vines and wine experience to share.
And a special good year I wish for Bijal Shah, It is his passion that makes things happened and our work possible and successful. And a good year to Tom Campbell, for his experience, understanding and support all year long, a good year to C$ris, all the co-workers, team and all the people involved in the Woodhouse family, et bien sur a good year to all our friends and customers. YOU!!!
